The property, which has belonged to the Gazeau-Varambon family since 1850, lies at the locality known as Les Rontés, in the commune of Fuissé. The vineyards are grouped within the Clos, except for the ‘Pierrefolle’ plot and half a hectare of Saint Amour, one of the Beaujolais wines, in the Côte de Bessay locality.
All the vines are grown under Agriculture Biologique [organic farming] (Ecocert certification since 2005). The grapes are harvested by hand into crates, the alcoholic fermentation is performed using only natural yeasts, in 228- and 400 litre casks and 3,000 litre tuns, without adding sugar, acid, or enzymes. The maturing on lees, without stirring, lasts for 12 months for the ‘Clos Varambon’ and 18–22 months for the ‘Pierrefolle’ and ‘Les Birbettes’, which are bottled without fining or filtration.
